Adrian Seddon, Head Chef
South African born & bred, Adrian started his working life in the National Service in South Africa. After two years with the military, he began his career as a chef at The Gold Reef City Hotel in Johannesburg, before moving to London in 1986 and joining the team at the ICI Training Centre.
In 1988, Adrian moved to the North West of England, and joined the team at The Inn at Whitewell, in the Forest of Bowland. Wanting a fresh challenge, Adrian joined Shire Hotels in 1996 as Head Chef at
The Millstone Hotel, Mellor, where he worked for 18 months, retaining the hotel’s AA rosette. His success at The Millstone led to a promotion to Head Chef at the Cottons Hotel in 1998.
When Adrian is not behind the stove, he enjoys riding his motorbike and spending time with his children. Adrian describes himself as an easygoing person: ‘I enjoy simple food with a modern twist, one of my favourite dishes is a simple fillet of grilled sea bass with king scallops on a thin tomato tart, served with a chilled glass of Australian Wolf Bass.’
