Natalie Brook, Assistant Restaurant Manager

Natalie started at the Cottons Hotel in 2006 as a member of the Food Service Team. Within the two years she has progressed through a supervisory role to her newly appointed position as Assistant Restaurant Manager. Natalie is one of the first delegates from Shire Hotels to be nominated for the Food & Drink Academy.

If you had the chance to dine in any restaurant, where would it be?
If I had the choice of dining anywhere, it would have to be Claridges - firstly because it is Claridges and has an excellent reputation, but secondly because of Gordon Ramsay…who takes pride in the quality of his food, service and standards (plus he is very good looking!).

How do you feel about being nominated for the Shire Hotels Food & Drink Academy?
I feel honoured that the hotel has given me the chance to join the Food & Drink Academy and progress my career by investing time, money and experiences I would not normally have been able to be exposed to.

What do you enjoy most about your new role?
I feel now that I can influence the restaurant through completing staff coaching and training. I am relishing learning about the business side of running a restaurant which is what I have aspired to do since leaving school.
